After a few weeks of traveling for holidays I finally got to meal plan again! I started looking through what we already had & realized that we had about a month's worth of meals between the pantry & freezer. So it was time for another "eat from the pantry" challenge!
What I did first was pulled everything out of the freezer to see what needed to be tossed and to organize what we had. This let me see what items I could use to make different meals.
I think went through everything and made a list of what meals we had and how many meals they would make. {ex: we have about two meals worth of faijta chicken and tortillas, 3 crock pot meals, two meals worth of chicken breasts, etc}
Then I divided the list to 4 to 5 meals a week to give us a little room to move things around, eat leftovers or go out to eat.
I'm excited about lowering our grocery bill and also making use of what we already have!
Here's our meal plan for the month:
Week 1
Monday - Mediterranean Chicken Pasta
Tuesday - Crock Pot Meal + twice baked potatoes
Wednesday - leftovers
Thursday - bacon, eggs, toast
Friday - pizza
Week 2
Monday - Chicken Faijta Tacos
Tuesday - Crock Pot Meal
Wednesday - leftovers
Thursday - omelets and toast
Week 3
Monday - Baked Ziti with meatballs
Tuesday - Crock Pot Meal
Wednesday - Baked Chicken with veggies
Thursday - leftovers
Week 4
Monday - Chicken Faijta Tacos
Tuesday - Spaghetti with meat sauce
Wednesday - Cowboy Soup
Thursday - leftovers
I'll still be grocery shopping for breakfast/lunch items plus fresh produce. We also have things for soups & grilled sandwiches to get us by on the leftovers day and weekend. I'll be sure to update at the end of the month!

This is inspiring! I'm about to do something similar just with all the leftovers we've accumulated in the fridge.
